It’s official, Michelin Guides France 2012 is out: Two Michelin stars for chef Mauro Colagreco at Mirazur, Menton, dsc07940France.

For the first time in the history of the Michelin Guide — a book that makes or breaks the best chefs in the world , an Argentine  —  Mauro Colagreco, 36, chef/ owner of the restaurant Mirazur, Menton — won a second Michelin star.  This is also a first a Latin American chef receives this coveted recognition .

With this second star Colagreco continues his meteoric career in the exclusive and demanding environment of great international cuisine.

At an age where others just begin to break through, the Argentinean-born chef of Italian and Spanish descent has become a reference. After culinary school in his native Buenos Aires, he went to France to work with the bestdsc07945: Bernard Loiseau at Le Côte d'Or in Saulieu, he perfected his craft under the demanding Alain Passard at the 3-star Michelin l'Arpège in Paris, with Alain Ducasse at the Plaza Athénée, Paris;  and with Guy Martin, the chef at 3-Michelin stars Grand Véfour, among other luminaries.

He was awarded his Michelin star the first year Mirazur opened, and when he was named Chef of the Year in the French guide Gault Millau, he became the first non-French chef to have been given the title. To this day he remains the only one.

At Mirazur in Menton, a paradisiacal corner of the Riviera across from the charming town of Ventimiglia on the Italian border, the search for new flavors have propelled Colagreco into a dsc07948vertiginous career and well-deserved kudos —  Mirazur,listed in US magazines among the top ten restaurants in the world was among the NYTimes’  10 Restaurants Worth a Plane Ride.

Perched on the flank of a hill fragrant from Provence herbs in the midst of one of the French Riviera’s  most exotic potager — the French word for ‘vegetable garden’,  Mirazur commands an awesome 180 °view of the Mediterranean.  This is where chef Colagreco grows the organic herbs, flowers and fruit  — from asparagus and borage to wild garlic blossoms — which he uses in his dishes, giving a whole new meaning to the term “garden-fresh”.

A tireless traveler, the young chef enthusiastically absorbs new forms of dsc07949cuisine.  He analyzes them, deconstructs them and he incorporates them with his own twist into dishes that will dazzle his customers.  Tomato martini with tiny little leaves from the garden topped with a slick of saffron oil gelée  — from the Provençal saffron cultivated nearby— and various petals and miniature herb leaves, and mate (an Argentine tea) macarons are just among the unique tastes that create unforgettable experiences for all the senses.

Of the 2012 Michelin guide list’s 594 starred restaurants worldwide;  Mauro Colagreco’s Mirazur in Menton is among the 83 two-Michelin starred restaurants in the world.
