Interview with Lee Brian Schrager: Fried & True, more than 50 recipes for America’s Best Fried chicken and Sides

 

Some like it hot, some like it mild, some like it in a bucket, others in a bun; some like a crispy skin, others prefer it skinless…  In his new book Fried & True Lee Brian Schrager, founder of the South Beach Wine & Food Festival and  VP  of corporate communications and national events for Southern Wine & Spirit, chronicles more than 50 of America’s best fried chicken recipes—both back-road and big-city iterations. He leaves no bone unpicked as he explores the phenomenon of what he calls America’s “number-one guilty pleasure” and peppers it with interesting facts (like the origins of fried chicken – Scottish! –  or the story of waffle with fried chicken) and tricks of the trade.
