On  the menu: appetizers of tuna confit ajo blanco and roasted grapes; chicken ropa vieja with hearts of palm and pickled onions; pickled artichoke escabeche with grapefruit and fennel. Main course choices offered are: tenderloin of beef served with chimichurri , parsnip puree and garlic potatoes; braised salmon, pepper and tomato sofrito stew; pan braised chicken thighs with Chistorra sausage, garbanzo beans and tomato.  Dessert choices include caramelized pineapple served with coffee-flavored whipped cream and coconut ice cream, Cuban coffee cortadito flan with orange mint chiffonade or a cheese plate of Brie, herbed goat cheese, Morbier, Gruyère and Roquefort cheese.

The collaboration is part of the unique “Star Chefs” partnership between Ritz-Carlton and Lufthansa, which continues through December 31, 2011 and features Ritz-Carlton chefs from across the country. The airline’s customer satisfaction ratings for in-flight meals are the highest they’ve ever been worldwide since The Ritz-Carlton menus were implemented.
