GOURMET PASSOVER AND EASTER DINNERS

Over Passover, Jews Eat History At Chef Allen’s, 19088 NE 29th Ave., Aventura.

On Wednesday, April 12 and Thursday, April 13, the first two nights of Passover, the Passover Seder plate will feature. Dinner prepared by Chef Allen Susser with include three different types Venetian, Caribbean, and Yemenite Harosets- a sweet fruit, nut and wine mixture, reflecting the diversity of Judaism throughout the world; Spiced Mahi Mahi Gefilte Fish with Bitter Herb Salad, “Red Sea Salt” and Borsht Foam; Latin Chicken Asopao with Saffron, Cilantro and Chicken Dumplings or Spinach Matzo Tart with Raisins, Pine Nuts, Tangerine and Sage; followed by Moroccan Spiced Roasted Chicken with Pearl Onions & Chick Peas with Honey and Cilantro, or Red Wine Braised Short Ribs Vindaloo with Tiny Aubergines and Spice Route Fingerling Potatoes. For desserts: Pineapple - Pistachio Baklava sprinkled with Orange Blossom Syrup, or Chocolate Banana Gelato with Coconut Macaroons and “Hot” Chocolate Cinnamon Sauce.
During the Passover week Chef allen’s will serve foods appropriate for Passover. The proceeds from the seders will be donated to the Rose Rosenkrantz Philanthropic League to buy Passover foods for those who are less fortunate.

Chef Dewey LoSasso’s Passover menu will be served on Wednesday April 12 and Thursday April 13, with a medley of plates for the table: egg white fritatta topped with eggplant caviar; charred scallion creme fraiche, boiled eggs and parsley; cumin, Miami shores mango and herb haroset papaya – apple haroset, drizzle of red wine- spring flower syrup. As first course, there is a choice of spinach goat cheese ‘crisp’, field greens with lemon dressing, almonds and chopped tomatoes, or chilled tomato gazpacho with diced cucumber, extra virgin olive oil. Then, pulled organic chicken and basil soup with toasted garlic and calabaza dumpling, and for entrees, a choice of grilled yellowtail snapper over savory matzo, ginger –red onion marmalade; roasted turkey with wheatberry stuffing, cranberry chutney; braised short rib with chopped liver toast; or roasted duck with orange lavender sauce, accompanied by three-potato kugels: purple, white and sweet potatoes, roasted beets with gorgonzola, and carrot and salsify tsimmes, with dried berries. Desserts for the table include: grilled, caramelized plums, compote of honeydew melon; apple crisp, matzo crumble; guava glazed coconut macaroons; and chocolate truffles.

Wednesday, April 12, 2006 & Thursday, April 13, 2006, starting at 5 p.m., Chef Andy Trousdale will serve Traditional Seder plates with a menu of Layered Whitefish & Salmon Terrine, Baby Beets, Grain Mustard & Horseradish Vinaigrette; Spring Chicken & Kaffir Lime Scented Broth, Miniature Tarragon Scented Matza Dumplings; Slow Braised Beef Shortribs or Honey Glazed Roasted Herb Game Hen, or Grilled Salmon with Glazed Carrots, Grilled Zucchini, Potato Pancakes; followed by Baked Apple stuffed with Brown Sugar, Hazelnuts & Raisins.

Cost: $24.95 for adults and $10.95 for children 6-12.

Perricone’s Marketplace & Café offers Easter Sunday Brunch, April 16, from 10 a.m. to 4 p.m. The brunch includes omelet and pasta stations, eggs Benedict, herb roasted potatoes, breakfast sausage, bacon, fresh nova salmon and mozzarella caprese platters, assorted combinations of prepared pasta salads, bagels, muffins, baguettes and an alternating meat, chicken and fish throughout the day. Also included will be desert (assorted cakes, cookies and homemade flan), American coffee, iced tea, orange juice or mimosa (each additional mimosa will be $4.95).

Dale and Chef Dewey LoSasso are giving a modern take on traditional with dishes like Bloody Mary ceviche of grouper and snapper; Charred lobster gazpacho, Potato pancakes with American sturgeon caviar and basil crème fraiche for starters; and maple glazed Roasted ham with sweet potato mash; Mediterranean eggs benedict on toasted focaccia, tomato hollandaise and pancetta; Roasted rabbit loin with creamy polenta, fig – onion marmalade, grilled asparagus; Herb seared tuna niçoise; Steak and easter eggs; Pan seared almond chicken paillard; or Artichoke and goat cheese frittata, with – for the table - Hash browns and Parmesan reggiano grits. A dessert spread will be served buffet-style in Dale’s Wine Room. Sunday April 16 Brunch is served from 11:30 – 3:00, and the restaurant is open for dinner from 5:30 – 10:00

On Sunday April 16 from 10:30 am to 3:00 pm, Easter Brunch will be served at the Grand Ballroom at Sonesta Key Biscayne, with a buffet including caviar and champagne, fresh salads and fruits, international cheeses, pates and terrines. Gourmet smoked fish display, raw bar, carving station, omelets and Belgium waffles prepared to order and a grand display of delectable desserts.
