THE ART OF PERUVIAN CUISINE AT PANORAMA, SONESTA HOTEL & SUITES COCONUT GROVE
Christopher Cramer, Executive Chef of Sonesta Hotel & Suites Coconut Grove, who just returned from Peru has brought back to Miami authentic Peruvian cuisine and a bride. The Art of Peruvian Cuisine” at Panorama Restaurant and Lounge, located on the 8th floor of Sonesta Hotel & Suites Coconut Grove showcases one of the most complex cuisines of Latin America “with Spanish, native Indian, African, French, Japanese, Chinese and other Asian influences,” explained Chef Cramer. Fresh fish and seafood, exotic fruits and nuts, a variety on potatoes and some of the most unusual varieties of peppers on earth are finding their way in Panorama Restaurant’s menu. For appetizers there Ravioles Dorados fried dim sum filled with minced beef, peppers and onions, Choritos A La Chalaca steamed mussels with a corn, tomato & onion salsa, Pastel de Choclo corn cake filled with queso fresco & duck confit topped with a porcini mushroom sauce, a hefty dish of Lomo De Res A La Huancaina con Salsa Criolla seared medallions of beef tenderloin topped with salsa criolla, among other specialties.
But where the kitchen chines is in the ceviches Ceviche of tuna with avocado salad on rocoto chili causa; Conchas de Jengibre Scallops with lime juice, garlic & pickled ginger; and tuna ceviche with ají amarillo sauce; as well as all sorts of tiraditos. Entrees of fish, seafood, chicken and meats range from traditional to “Nouveau” Peruvian . AZUL, MANDARIN ORIENTAL MIAMI OFFERS SUMMERTIME LUNCH AND MIAMI SPICE MENU
At Mandarin Oriental, Miami, Azul’s chef Clay Conley is showcasing a menu of Mediterranean flavors with Asian and Latin influences new in the new a la carte summer lunch and Miami Spice three-course menu. For starters there’s tuna tiradito with crispy yucca, aji amarillo chantilly and tomato salsa, and miso-marinated rare salmon, sticky rice, tomato and avocado salad; entrees list grilled rainbow trout with warm bacon & spinach salad topped with a fried egg, and Maine lobster ‘roll’ buttered brioche with haricot vert, as well as favorites like the trio of Kobe sliders, blue cheese and caramelized onions, classic cheddar burger, bacon, mushrooms and gruyere with fries, or Crispy falafel with crab, cucumber raita and chickpea hummus.
The three-course Miami Spice lunch menu (August and September) offers a choice of appetizer, entree and dessert for $20.06 per person (excludes tax and gratuity). A sampling of the Miami Spice lunch menu is: first course options- “crispy calamari, chipotle aioli, black bean salad” and “corvina ceviche, aji amarillo, tostones, avocado”; main course- “cornmeal crusted flounder, andouille and white bean ragu, shrimp remoulade” and “grilled churrasco, corn silk, grilled red onion, tomato salad;” and dessert: “bittersweet ‘Caraibe’ chocolate cake, coconut-caramel ice cream, Caribbean sauce” and “lemon cream cheese sponge cake, fresh raspberries, strawberry-mint sorbet.”
