CHEF CLAY CONLEY OF AZUL, MANDARIN ORIENTAL MIAMI IN THE LIMELIGHT
Azul Chef Clay Conley will make a guest appearance on the Today Show (Ch. 6) cooking his signature dishes alongside Al Roker on Tuesday, October 10. He will be preparing one of his most popular Azul dishes – Miso-marinated hamachi belly with edamame fried rice, shrimp dumplings, sake butter sauce and dashi. New at Ocean Key Resort & Spa, one of the boutique hotel chain Noble House, two culinary industry veterans: Kevin Montoya, Executive Chef; and Robert Romanoff, Food & Beverage Director were tapped to enhance the award-winning Hot Tin Roof restaurant and Sunset Pier. Chef Kevin Montoya brings a vast experience accumulated in some of Florida’s top establishments such as the Ritz Carlton in Amelia Island, and Key West’s Casa Marina Resort. Most recently Montoya was the Executive Chef at the Sheraton Key West. Montoya’s use of the freshest and finest ingredients sourced from the local waters, farms and artisan producers of Florida has been his trademark.
Key West resident Robert Romanoff hails from Don Shula’s “On the Beach” Steak House which earned the Wine Spectator’s “Award of Excellence” for four consecutive years under his baton. Prior to that, he held various food and beverage positions with Tripp Restaurant Group (A&B; Lobster House and Alonzo’s Oyster Bar), The CasaMarina, and served as director of restaurants at the Memphis Marriott in Tennessee.

NEW MENU AT CAFÉ SAMBAL, MANDARIN ORIENTAL MIAMI
While Chef Gerdy Rodriguez’s Latin and European culinary influences have melded with Cafe Sambal’s modern Asian menu, into innovative creations, he believes “in keeping the integrity of the dish, and offering diversity throughout the menu” with dishes like honey-miso seabass with young corn, edamame and littleneck clams ($30), and ceviche of Pacific hamachi with jalapeño, sweet potato, and textures of corn ($25). The new a la carte menu at Café Sambal, with flavors from Japan, Thailand, China, India, Peru and Spain and a “tapas style sharing” style, is segmented into Small Plates, Large Plates, Thai/Wok Specialties and Seasonal Menu and an elaborate sushi and sake selection. For lunch there are creative sandwiches, light entrees and more healthy low carb salads.
