OCTOBER 15TH MARKS THE OPENING OF STONE CRAB SEASON!

Some facts about stone crabs:
-Stone crabs are cooked when caught to extend their shelf life. They retain all the juice in their shell as long as it has not been cracked. The crabs should be eaten immediately after being opened, otherwise the meat will lose its juice and become dry.
-Stone Crabs are very sweet, so try to pair them with something acidic, creamy, or slightly spicy. Previously frozen crabs are easy to detect. The meat will be stuck to the shell from the freezing and thawing process.
-Stone crabs need very little fuss. Keep your dishes simple as not to distract from the focus on the delicacy of this treat.
-Stone crabs are very expensive much like caviar, foie gras, truffles, etc. You should enjoy them as a taster and savor the moment. Remember Gluttony kills the flavor! Enjoy.
